Lite and Fresh Recipes for Summertime Fun

As balmy temperatures, sunny skies, and all-around glorious weather conditions entice us outdoors in sandals and shorts, to bask in the extra hours of sunlight, discovering ways to avoid standing at the stove becomes a priority. In addition, relaxing and enjoying the traditional summertime agenda of picnics, festivals and gatherings, is so much easier when combined with healthy recipes.

So if the idea of serving up the same-old, chicken strips and mayonnaise laden salads this year strikes you with dread and revulsion, and threatens to throw a chill over your excitement, try out these fresh and healthy recipes that will accentuate your summertime fun, and beat the heat.

Healthy Recipes for Shredded Meat Fillings

Great on fat free tortillas, gluten free rolls, or pita breads when paired with a refreshing homemade salsa, 360 Cookware creates a moist, delicate flavor. For healthy recipes with more kick, add a teaspoon of ground cayenne pepper and a few dashes of Tabasco to the liquid after shredding.

1 ½ pounds beef tenderloin
¼ cup water
3 Tbs red wine vinegar
1 Tbs Worcestershire sauce
1 tsp cumin seed
1 tsp coriander seed
½ tsp ground black pepper

Heat your 360 four-quart stockpot over medium temperature until a drop of water dances across the surface, and sear the meat on all sides. Add the remaining ingredients to the pot, and reduce the heat to med-low, then cover to engage the vapor seal. Once the lid spins freely, cook for approx. 30 minutes. Remove from the heat and allow to set for an additional 15 minutes, then carefully remove the tenderloin and shred by hand, using two forks. Strain the liquid to remove the seeds and place the meat and juices back in the 4-quart pot. Simmer, uncovered for another 10-15 min, or until the liquid has almost evaporated.

The same method can be applied for chicken filling, simply omit the Worcestershire sauce and use 1 ½ pounds of skinless chicken breasts. Sear the meat on one side, and then add the spices and liquids, as well as ¼ cup finely diced onion. Cook over medium-low heat for approx. 10-15 minutes. Best of all, these healthy recipes for fillings can be enjoyed hot or cold.

These fillings can be kept for 2-3 days in the refrigerator, and work great in coolers for sandwiches or wraps, offering no clean up, utensil free meals.

Healthy Recipes for Yummy Mango Salsa, Yogurt Pellets, and Frozen Grapes

1 cup fresh diced mango
1/3 cup diced, sweet bell pepper (red or orange)
¼ cup diced cucumber
3 Tbs finely diced scallions
1 Tbs fresh lime juice
1 Tbs tomato paste
Red pepper flakes

Combine all ingredients in a large bowl, and mix with a fork, lightly mashing the mango as you stir. This refreshing salsa is excellent as a dip, or as an accompaniment to the spicy fillings.

To make yummy frozen grapes simply wash and slice grapes in half, lengthwise, then place cut side up on the small cookie sheet, for yogurt, pipe pellets directly on the sheet using a pastry bag or freezer bag with one corner snipped off. Place in the freezer for 1-2 hours until frozen through, then transfer to zip style baggies for a wonderful alternative to sugary popsicles.
